Noel Jaimes Sr. at the age of 19 came from southern Mexico to Texas on foot with a dream in mind. His dream was to someday own his own restaurant and to please many customers with his great food and service. He began working as a fence builder in Ingram, Texas back in 1975 for five dollars a day. Noel saved every penny with the hope that someday he'll be able to open his restaurant. He soon married his wife Jacinta, also from Mexico, and both worked hard in the restaurant industry for 24 years before they could accomplish their dream. Over these 24 years Noel absorbed everything he could that had to do with restaurants and food service. Now, Noel and Jacinta are owners of various locations and with the help of their children they plan on expanding their business even further, satisfying many more customers with their home-made recipes and great customer service. This is how El Tapatio's established May3, 1999 in Waco, Texas by the Jaimes Family came to existence.
**Tapatio is an old folk song danced by Mexican people who called themselves Tapatios. The mariachis that played this beautiful music were the happiest ones because they enjoyed themselves so much playing it. Even though the Tapatio's had their daily life to live, they showed us that being happy and having a smile makes us treat our customers with care and with the best service possible.**
